Green Beans with Mushroom


 

Story

It has been a while since I posted a new recipe.  Life gets busy.  Just last week I was speaking to a friend who mentioned, she needs to add more vegetables to her and her families’ diet.  That reminded me of my family 5 years ago where we went through that transition.  Now we have more vegetables than meat.  You can call our meals vegetarian with meat on the side.

I told my friend about my blog and that also motivated me to post more vegetable recipes.  I almost feel like my blog will include more vegetable recipes than meat.  People need to have more vegetable to have a better healthier lifestyle and hopefully my blog can help you.

Ingredients

  • 5 cup of fresh cut green beans
  • 1/8 cup of Canola Oil
  • 1 medium chopped onion
  • 1 chopped garlic clove
  • 1/4 cup water
  • 1 Knorr Chicken Bouillon Cube (chicken, beef or vegetable)
  • Red pepper flakes if you want some heat.

Procedures

  1. Preheat a medium size cooking pan over medium heat. Add onions and garlic in the oil.  Sauté the mixture until the onions are caramelized.
  2. Add smashed Knorr cube.  You can find it in Walmart.
  3. Stir it a little and add green beans and mushrooms. Add water and stir the mixture.  Cover the pot for 15 minutes. add more water if needed.
  4. Uncover and stir for the last time. Cover the pot again for 15 more minutes green beans are done. Add pepper flakes if you want a little heat.

 Story
 
This cabbage recipe is quiet simple and is inspired from a mixed vegetable I ate at a friend’s house.
Whenever I try to replicate a food I ate, it reminds me of what my daughter once said when we were at a restaurant. “Mom, one of the good things about coming to a restaurant with you is, if there is an item we like, you always try to make it for us at home”.   It made me feel great and motivates me to keep cooking and try new recipes.

Ingredients

  • 2 tablespoon of Canola Oil
  • 1/2 teaspoon of mustard seeds
  • 1 cup of chopped onion
  • 1 chopped garlic clove
  • 1/2 cup chopped tomatoes
  • 1/2 teaspoon of powdered Cayenne pepper
  • 3 small Thai chilies (add less or not at all if you don't like it hot)
  • 1 teaspoon salt (more or less depending on your taste)
  • Finely chopped 1/2 a large Cabbage

Procedures
  1. Preheat a medium size cooking pot over medium heat. Add mustard seeds, the onions and garlic in the oil.  Sauté the mixture until the onions are caramelized.
  2. Add tomato, powdered cayenne pepper, thai chili and salt and stir it a few times. 
  3. Add Cabbage and water and stir the mixture.  Cover the pot for 10 minutes.
  4. Uncover and stir for the last time. Cover the pot again for 10 more minutes on low until cabbage is tender.

Brussels Sprout and Potatoes Hash with Oregano

 

 

Story

I created this recipe this morning. I wanted to make a nice breakfast for my son as he was going back to college but noticed I had only 3 potatoes and needed to feed 4. Looked in the fridge and saw the Brussels sprout and thought why not. This is also a great way to add vegetables to you breakfast.  Oregano is an herb I grow in my garden and love the smell and taste of it.


Ingredients

  • 2 tablespoon of Canola Oil
  • 1 cup of chopped onion
  • 1 teaspoon of garlic powder
  • 3 small Thai chilies (add less or not at all if you don't like it hot)
  • Freshly ground black pepper to personal preference
  • 1 teaspoon sea salt
  • 2 cup of Brussels Sprout cut in small quarter
  • 3 cups of Gold potatoes, cut into 1/2-inch pieces2 tablespoon fresh oregano

 

Procedures

  1. Preheat a large pan over medium heat. Sauté the onions in the oil until the onions are caramelized. Add garlic powder, Thai chili, ground pepper and salt and fry for another 30 seconds.
  2. Add potatoes and Brussels sprout in the pan and stir to mix. Add 1/4 cup of water and cover the pan and cook for about 30 minutes, stirring occasionally, until the potatoes are tender and lightly browned. Add chopped Oregano 1 minute before taking the pan off the stove. Serve with egg and turkey bacon.
 
 


 

Healthy Eating


It’s been 3 years since we, my husband and I, started our new journey to healthy eating. I joined Weight Watchers (http://www.weightwatchers.com) at work and lost about 5 pounds before my husband decided to join as well.

We learned several really good basic habits from weight watchers: have lots of vegetables and fruits, fiber and water. At the time my diet didn't really include many vegetables.

Now going into 3rd year of our journey, I love vegetables as long as I mix it up and try to do something different every time.

My goal for this blog is to add recipes of my weekly cooking which usually includes vegetables, fish, chicken and beans. This will also help me research about healthy foods and share my findings.

The title of my blog "Add a little spice to your life" implies you can add spice to your food just like you would to your life to keep it fun and exciting. Spice does not mean spicy or hot, it just means you are using different spices and herbs to keep your food interesting and delicious.
